As with all traditional specialities, the recipes for tasty carne salada (salty meat) are characterised by small variations depending on the area where they originated.
All of the recipes call for juniper berries, which lend the meat its distinctive aroma, but lemon, sage, marjoram and other ingredients are also often used.
Thus prepared, the beef rump is then carefully put in a container and covered with a press. This helps the juices drain and allows the aromas to better penetrate, and therefore flavour, the meat. Pressing and maceration in brine is the longest phase in the preparation of this speciality, lasting as many as twenty or twenty-five days, and requiring days checks. The optional addition of white wine ensures maintenance of the perfect level of moisture and creation of the brine – made up of the juices and added aromas – that will gradually cover the meat, providing it with its characteristic flavour. Carne salada was developed as a method for preserving meat, which could be then boiled and eaten throughout the whole winter. Today it is often also eaten raw – sliced thin or chopped – or quickly cooked in the pan or on the grill, after adding some oil and a few drops of vinegar. It is typically accompanied by boiled beans flavoured with oil and black bread, this, too, typical of the region.
